Villa di Vetrice's 1990 Vin Santo is a stunning example of the appellation's potential for aging. Vin Santo or "Holy Wine" is a unique wine in the panorama of Italian (or international) winemaking. The Trebbiano and Malvasia grapes are dried on mats after harvest and then vinified. Fermentation is arrested by natural cooling of winter months. The wine is then transferred to small old-oak barrels and then stored in a
vinsantoio
, an attic designed especially for this purpose. In spring, as temperatures rise, the vinsantoio begins to warm and a miraculous second fermentation takes place in the barrels (some believe this is the origin of the name since the wine comes back to life just as Christ rose from his tomb).
